Ingredients
  1. 5 pounds of washed red potatoes, chopped (preferably organic)
  2. 1 sleeve of celery, diced (preferably organic)
  3. 4-5 low-sodium dill pickles, chopped
  4. 1/4 to 1/2 c. Dijon mustard (to taste)
  5. 1/4 to 1/2 c. Vegenaise (to taste)
  6. Red wine vinegar, splash
  7. 1 teaspoon celery seed
Instructions
  1. Put potatoes in large pot of boiling water and simmer until soft but not mushy (approx. 10 mins)
  2. Remove from heat immediately, empty water, and cool by running under cold water
  3. Set aside in large serving bowl
  4. To potatoes, add all other ingredients
  5. When adding dijon mustard and Vegenaise, start with small amounts, stir thoroughly, and taste
  6. Add more as needed to achieve desired flavor
Notes
  1. Double the recipe as this vegan potato salad is a huge hit!
